I love my slow cooker but, I must admit, at first I really wasn’t that sure what to cook with it. My first few meals came out oaky but they weren’t exactly tasty! I just tossed a few vegetables and some meat into my cooker, added some lentils, and a couple of pints of vegetable stock and then switched it on. Six hours later I had a hot meal but I’m not sure what I’d call it – a casserole? A stew? A hot mess?!
Anyway, after quite a lot of semi-successful experimentation, I started looking for recipes because I was getting bored of the same old Sarah-pot luck stew and boy, am I glad I did. The first few recipes I tried really opened my eyes to how good slow cooked food could taste and each one took no more than a few minutes to prepare.
I also learned tricks like layering ingredients and browning the meat before putting it in the slow cooker that made the meals taste even better.

I love chicken; there, I said it! Some people think chicken is bland as, after all, “everything tastes like chicken,” but if you cook it properly and especially in a slow cooker, chicken can be super-tasty.
I think chicken gets a bad rap because it’s so low in fat and most people chose chicken breasts which are leaner still. I, on the other hand, much prefer chicken thighs as the fat content is a little higher, the meat is darker, and it just tastes better.
