This recipe is perfect for Thanksgiving. Not only does it taste great, it requires next to no work on your part. Just put the ingredients into your slow cooker (the slow cooker I use and my recommendations here) and leave for three hours, leaving you free to spend time with family and friends, and prepare the rest of your Thanksgiving dinner. A few years ago, I offered to cook Thanksgiving dinner for my family and friends. I planned the menu carefully and bought everything in advance so I was perfectly prepared. I got up early, prepped all the ingredients, and got to work. Everything was going super-smoothly!
However, that all changed when my first guest arrived and asked me “Hey Sarah, what’s for dessert?” Oh my – I had completely forgotten about making anything for dessert!
I quickly cracked open my laptop, typed in the few ingredients I could find in my kitchen cupboards and found the recipe I’m going to share with you today.
Luckily, we were planning to eat later, so I had time to put this pumpkin cake together and cook it while we ate and chatted. When dessert time rolled around, I served my emergency dessert with vanilla ice cream and it was a big hit. Who said great cooking hard to be hard?!
