Pizza is a family dinnertime favorite but that oh-so-delicious base is made of very refined, high gluten flour. That means that, if you have a gluten intolerance, this delightful dinner is off the menu for you and your loved ones. But now, with this recipe, you too can enjoy pizza. It tastes so good and is so much healthier than regular pizza that you’ll soon forget that it’s completely free from gluten!
Ingredients – serves 2:
- 7 ounces gluten-free flour – I always use this one available at amazon.com.
- ½ teaspoon salt
- 2 tablespoon olive oil
- Small sachet fast-action dried yeast
- 1 tablespoon chopped rosemary
- 1 teaspoon ground black pepper
- ½ cup warm water
- 1 small jar tomato bruschetta topping
- 5 ounces mozzarella, thickly sliced
- ½ avocado, thickly sliced
- 2 ounces fresh rocket leaves
- 12 cherry tomatoes, halved
- 4 slices Parma ham
- 4 slices ham
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
Heat oven to 220C/fan 200C/gas 7. Put the flour, salt, olive oil, yeast, rosemary and pepper into a food processor. Pulse until well mixed. With the motor running, add enough water to bring the flour to a soft, but not sticky dough. Tip onto a work surface and knead until it comes together.
Halve the dough. If you only have one shelf in your oven and are cooking in batches, cover one half in saran wrap. Roll out each half directly onto lightly oiled baking sheets into very thin 10in rounds. Do not form a rim at the edge. Spread the tomato topping over each piece of dough, almost to the edge. Leave to stand for 15 minutes. Bake in the hot oven for 12-15 minutes or until the dough is crisp.
Lift each round onto a plate, add the toppings, and serve warm. If you prefer different toppings, feel free to create your own pizza masterpiece!
