I love Saturday mornings; they’re so relaxed. And a nice cup of coffee with delicious toast is always a nice way to start my weekend. I love toast for breakfast and when I saw this avocado, cheese and eggs toast on the blog anutritionisteats.com I had to give it a try. Super simple, and easy to make, you can make this awesome breakfast in about 10 minutes.
Avocado is one of my favorite superfoods (my top 10 superfoods here). It’s high in healthy fats and makes you feel full for a couple of hours. The two eggs add protein, while the bread provides some carbs, making this breakfast a high healthy fats, high protein, and low carb breakfast; perfect for a healthy first meal of the day.
I’ve also tried adding sliced tomato or jamón ibérico to replace the cheese and it makes a delicious variation.
Preparation time: 6 minutes
Cook time: 5 minutes
Serves: 2 servings
So, what do you need?
- 2 slices bread
- 1 sliced avocado
- 2 slices of cheese
- 2 fried eggs
- Set the broiler to high
- Lightly toast the 2 slices of bread
- Place the slices of avocado on top of the bread and cover with the slices of cheese
- Broil it until the cheese turns golden; this will only take moment so keep your eyes on the broiler
- Fry the eggs in a Teflon/ or ceramic pan with just a little bit of olive oil to avoid adding any extra calories
- Place the eggs on top of the toast
Once you are done, you can put your toast in a container and take it to work for a mid-morning snack But, if you can, warm up before eating as it will taste better.
